Ingredients

  • 4 prosciutto slices, halved lengthways
  • 4 (about 200g each) beef fillets
  • 1 teaspoon olive oil
  • 1/4 cup (60ml) brandy
  • 2 tablespoons wholegrain mustard
  • 1/4 cup (60ml) thin cream
  • 3 desiree potatoes, peeled, coarsely chopped
  • 1/2 cup (125g) sour cream
  • 1/4 cup finely chopped chives
  • Steamed snow peas, to serve

Method

  • Step 1 Wrap the prosciutto around the edge of each fillet. Heat oil in a large frying pan over high heat. Season sides of fillets with freshly ground black pepper. Cook 3-4 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes.
  • Step 2 Add the brandy to the pan and bring to the boil. Reduce heat to medium and add mustard and cream. Cook, stirring, for 2-3 minutes or until sauce boils and thickens. Remove from heat.
  • Step 3 Meanwhile, cook the potato in a saucepan of boiling water for 10 minutes or until tender. Drain well and return to pan with sour cream. Use a potato masher or fork to mash until smooth. Add the chives and season with salt and pepper.
  • Step 4 Spoon the mashed potato among serving plates. Top with steaks and drizzle with sauce. Serve immediately with snow peas.
