How to make Prosciutto stuffed potato bake

Ingredients

  • 450ml pouring cream
  • 185ml (3/4 cup) milk
  • 2kg potatoes, peeled, thinly sliced lengthways
  • 1 small brown onion, halved, thinly sliced
  • 100g prosciutto, halved lengthways
  • 20g (1/4 cup) finely grated parmesan

Method

  • Step 1 Preheat the oven to 170C/150C fan forced. Combine the cream and milk in a jug. Season well.
  • Step 2 Stand the potato slices upright in rows across the base of a 6cm-deep, 4L round ovenproof baking dish. Arrange the onion slices between the potato slices. Pour over the cream mixture.
  • Step 3 Cover the dish with foil and place on a baking tray. Bake for 1 1/2 hours or until the potato is tender.
  • Step 4 Increase the oven temperature to 180C/160C fan forced. Remove the foil from the potato bake and carefully weave the prosciutto between some of the potato slices. Sprinkle with parmesan. Return to the oven and bake, uncovered, for 1 hour or until golden brown and the potato is very tender.
