Ingredients

  • 500g Coles Bolognese Pork & Beef Mince
  • 3/4 cup fresh breadcrumbs (made from day-old bread)
  • 1 egg
  • 1/2 cup finely grated parmesan
  • 2 tablespoons chopped flat-leaf parsley
  • 4 slices prosciutto
  • 3 large brushed potatoes, peeled, chopped
  • 2 tablespoons olive oil
  • 500g jar napolitana pasta sauce
  • 2 garlic cloves, thinly sliced
  • 1 mini savoy cabbage, trimmed, core removed, cut into wedges

Method

  • Step 1 Preheat oven to 200C (180C fan-forced). Combine mince, breadcrumbs, egg, parmesan and parsley in a bowl. Season. Shape into a 20cm-long log. Wrap prosciutto, slightly overlapping, around log. Place in a medium ovenproof dish and bake for 15 mins.
  • Step 2 Meanwhile, cook potato in a microwave-safe container, covered with water and a lid, on high for 4-5 mins or until almost tender. Drain on paper towel. Place on a baking tray. Drizzle with 1 tablespoon oil. Season with salt. Toss.
  • Step 3 Pour sauce around meatloaf. Bake with the potatoes for 30 mins or until cooked through and the potatoes are crisp and golden.
  • Step 4 Heat remaining oil in a large saucepan over high heat. Cook garlic for 1 min. Add cabbage and 1/4 cup water. Cook for 2 mins. Cover and cook for 2-3 mins or until just tender.
  • Step 5 Cut the meatloaf into 8 slices. Serve with potato and cabbage. Spoon over the sauce.
