Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 garlic clove, finely chopped
  • 3 teaspoons dried oregano
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika, plus extra, to sprinkle
  • 500g pork fillet, thinly sliced
  • 4 pita bread, warmed
  • Hot potato chips, to serve
  • Tzatziki dip, to serve
  • Thinly sliced red onion, to serve
  • Fresh continental parsley leaves, to serve

Method

  • Step 1 Combine the oil, vinegar, garlic, oregano, coriander and paprika in a glass bowl. Add the pork and toss well to combine. Season. Cover and set aside for 20 minutes to marinate.
  • Step 2 Preheat a chargrill pan over high heat. Spray with oil. Cook the pork, turning halfway, for 5 minutes or until just cooked. Transfer to a plate. Set aside for 3 minutes to rest. Chargrill the bread for 1 minute each side or until warmed.
  • Step 3 Divide the pork, chips, tzatziki, onion and parsley among the pita bread. Sprinkle with extra paprika. Fold up the bottom, then the sides of the pita and secure with paper or string.
