Ingredients

  • 3 teaspoons sesame seeds
  • 4 qukes, halved lengthways
  • 1 tablespoon soy sauce
  • 2 teaspoons rice wine vinegar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon finely grated fresh ginger
  • 1/2 teaspoon brown sugar
  • 12 natural oysters, in the half shell

Method

  • Step 1 Stir the sesame seeds in a small frying pan over medium heat for 2 minutes or until pale golden. Transfer to a bowl.
  • Step 2 Use a teaspoon to scrape the seeds from the qukes. Cut the qukes into thin strips.
  • Step 3 Combine soy sauce, vinegar, oil, ginger and sugar in a bowl.
  • Step 4 Divide dressing among the oysters. Top with the quke and sesame seeds.
