Ingredients

  • 1/4 cup boiling water
  • 1 tablespoon instant coffee powder
  • 1 1/2 cups icing sugar mixture
  • 3/4 cup plain flour
  • 1/2 cup self-raising flour
  • 1 cup almond meal (ground almonds)
  • 5 eggwhites, lightly beaten until frothy
  • 1/4 cup vegetable oil
  • 150g frozen cherries, halved

Method

  • Step 1 Preheat oven to 200°C/180°C fan-forced. Grease 12 holes of a 1/2 cup-capacity friand pan. Combine boiling water and coffee in a bowl. Cool for 10 minutes.
  • Step 2 Sift icing sugar and flours into a large bowl. Stir in almond meal. Make a well in centre. Add eggwhites, stirring constantly with a large metal spoon until almost combined. Add oil and coffee mixture. Stir to combine. Stir in half the cherries. Divide mixture among prepared holes. Scatter with remaining cherries.
  • Step 3 Bake for 15 to 20 minutes or until a skewer inserted in centre of 1 friand comes out clean. Cool in pan for 10 minutes. Turn out onto a wire rack to cool completely. Serve.
