Ingredients

  • 250g chilled fresh ricotta
  • 1 egg
  • 40g (1/4 cup) plain flour
  • 2 tablespoons caster sugar
  • 1 lemon, rind finely grated
  • 750ml (3 cups) vegetable oil, to shallow-fry
  • 80ml (1/3 cup) honey, or to taste

Method

  • Step 1 Use a balloon whisk or an electric beater to whisk the ricotta, egg, flour, sugar and lemon rind in a medium bowl until almost smooth. Cover and place in the fridge for 10 minutes to chill.
  • Step 2 Heat oil in a medium saucepan over medium heat. To make 3 fritters, spoon tablespoonsful of mixture into the hot oil. Cook, turning often with a metal spoon, for 2-3 minutes or until golden brown. Transfer to a plate lined with paper towel. Repeat in 2 more batches with the remaining mixture.
  • Step 3 Divide the fritters among small serving plates. Drizzle with honey and serve immediately.
