Ingredients

  • 1 cup cooked brown basmati rice
  • 2 tablespoons sun-dried tomato pesto
  • 1/4 cup semi-dried tomatoes, chopped
  • 1.2kg single turkey breast fillet (see note)
  • 1 tablespoon olive oil

Method

  • Step 1 Preheat oven to 190°C/170°C fan-forced. Combine rice, pesto and tomato in a bowl.
  • Step 2 Place turkey, skin-side down, on a flat surface. Place stuffing over turkey. Fold over to enclose filling. Secure with kitchen string at 3cm intervals. Place turkey, seam-side down, on a wire rack in a large roasting pan. Brush with oil. Season with salt and pepper. Pour 2 cups boiling water into pan to cover base.
  • Step 3 Roast for 40 minutes. Remove pan and turkey from oven. Add more water to pan if necessary. Cover turkey and pan loosely with foil. Roast for 30 to 35 minutes or until cooked through and juices run clear when thickest part of turkey is pierced with a skewer. Remove from oven. Stand for 10 minutes. Thickly slice. Serve.
