Ingredients

  • 6 medium red capsicum
  • 6 medium green capsicum
  • 1 tablespoon olive oil

Method

  • Step 1 Halve each capsicum. Remove and discard seeds and membrane. Cut each half into 4 slices lengthways. Place capsicum on prepared trays. Drizzle with oil. Season with salt and pepper. Toss to coat. Roast for 30 to 35 minutes or until browned and tender. Transfer capsicum to a heatproof bowl. Cover with plastic wrap. Set aside for 10 minutes. Peel and discard skin from capsicum. Set aside to cool completely.
