Ingredients

  • 18 medium desiree or chat potatoes
  • 18 slices mild pancetta
  • 18 large sage leaves
  • olive oil cooking spray

Method

  • Step 1 Preheat oven to 200°C. Line a baking tray with baking paper. Using an apple corer, remove the centre of each potato. Place a slice of pancetta on a flat surface and top with a sage leaf.
  • Step 2 Loosely roll pancetta, enclosing sage, then thread it through the centre of a potato. Place on prepared baking tray. Continue to fill remaining potatoes with pancetta and sage. Spray with olive oil and sprinkle with sea salt flakes. Bake for 45-55 minutes or until golden and crisp. Serve.
