Ingredients

  • 3 (about 350g) truss tomatoes, halved
  • 1 red capsicum, seeded, quartered
  • 1 red onion, coarsely chopped
  • 3 garlic cloves, bruised
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons mild paprika

Method

  • Step 1 Preheat oven to 180C. Combine tomato, capsicum, onion, garlic, oil, sugar and paprika in a large roasting pan. Season. Roast, stirring once, for 45 minutes or until vegetables are tender. Cool for 15 minutes.
  • Step 2 Process in a food processor until coarsely chopped and thick.
