Ingredients

  • 100g (1/2 cup) caster sugar
  • 2 tablespoons water
  • 150g pkt walnuts
  • 185ml (3/4 cup) extra virgin olive oil
  • 2 tablespoons mandarin juice
  • 2 tablespoons white balsamic vinegar
  • 200g baby rocket leaves
  • 6 mandarins, peeled, sliced crossways

Method

  • Step 1 Lightly spray a baking tray with oil. Stir sugar and water in a heavy-based saucepan over medium heat until sugar dissolves. Cook, without stirring, for 4 minutes or until light golden. Stir in the walnuts. Pour onto the tray. Use a fork to quickly separate. Set aside to set.
  • Step 2 Combine the oil, mandarin juice and vinegar in a jug. Season.
  • Step 3 Combine the rocket, mandarin and walnuts in a large bowl. Add the dressing and toss to combine.
