Ingredients

  • 400g premium dark cooking chocolate, chopped
  • 1 cup thickened cream
  • 1/3 cup caster sugar
  • 1/2 cup soft raspberry lollies, finely chopped
  • 1/2 cup ground almond meal
  • 1 cup mini marshmallows
  • 1/2 cup finely chopped pistachios
  • 375g packet dark chocolate melts
  • 200g packet crushed peanuts
  • 375g packet white chocolate melts
  • 2 cups moist coconut flakes

Method

  • Step 1 Place cooking chocolate in a large heatproof bowl. Place cream and sugar in a small saucepan over low heat. Stir until sugar dissolves. Increase heat and bring just to the boil. Pour over the chocolate in the bowl and leave for 5 mins, or until chocolate is soft. Stir until smooth. Cool to room temperature.
  • Step 2 Stir in raspberry lollies, almond meal, marshmallows and pistachios. Chill until the mixture is set, about 1 hr. Line a baking tray with baking paper. Using 2 tsp of mixture, shape into balls. Place onto prepared baking tray. Chill until set.
  • Step 3 Place dark chocolate melts in a heatproof bowl set over simmering water, making sure the bowls do not touch the water. Stir until smooth. Place peanuts in a flat bowl. Place a skewer in each of half of the truffles. Dip into the melted chocolate, gently tap on the side of the bowl to remove any excess, then roll in the peanuts. Stand the skewer upright on a large piece of polystyrene. When dark chocolate and peanuts are all used up, repeat process with remaining truffles, using white chocolate melts and coconut flakes. Leave for 30 mins, or until chocolate is set. Remove skewers.
