Ingredients

  • 80ml (1/3 cup) extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, crushed
  • 1 teaspoon honey
  • 2 tablespoons finely chopped fresh continental parsley
  • 500g green prawns, peeled and deveined
  • Sliced prosciutto
  • Baby tomatoes
  • Marinated olives
  • Soft-boiled eggs
  • Green beans, blanched
  • Salad leaves
  • Flaked almonds, toasted, to sprinkle

Method

  • Step 1 Combine the oil, vinegar, lemon juice, garlic, honey and parsley in a screw-top jar. Season. Seal and shake to combine.
  • Step 2 Transfer half of the oil to a glass bowl. Add the prawns and toss to combine. Set aside for 5 minutes, to marinate
  • Step 3 Meanwhile arrange prosciutto, tomatoes, olives, eggs, beans and salad leaves on a platter.
  • Step 4 5348771529001-5605379984001Heat a char-grill pan over high heat. Cook the prawns, turning, for 3 minutes or until cooked through. Transfer to the platter. Drizzle remaining dressing over the platter and sprinkle with almonds.
