Ingredients

  • 270g dried soba noodles
  • 1 bunch asparagus, cut into 3cm pieces
  • 1/2 bunch watercress, cut into small sprigs
  • 175g smoked salmon portion, flaked
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 4 green onions, thinly sliced
  • 2 tablespoons chilli soy noodle sauce

Method

  • Step 1 Cook noodles in a large saucepan of boiling, salted water for 2 minutes. Add asparagus. Return to the boil. Cook for 2 to 3 minutes or until noodles and asparagus are tender. Drain. Refresh under cold water. Drain.
  • Step 2 Transfer noodle mixture to a large bowl. Add watercress, salmon, cucumber, onion and sauce. Season with salt and pepper. Toss to combine. Serve.
