Ingredients

  • 30g butter
  • 2 tbs plain flour
  • 1 garlic clove, crushed
  • 2 cups (500ml) fish stock
  • 2 tsp lemon juice
  • 1 tbs olive oil
  • 4 Coles Australian Salmon Skin Off Portions
  • 1 lemon, thinly sliced
  • Steamed baby broccoli, to serve
  • Steamed green beans, to serve

Method

  • Step 1 Melt the butter in a medium saucepan over medium heat until it begins to foam. Add the flour and garlic. Cook, stirring, for 1 min or until the mixture is bubbling. Remove from heat. Gradually add the stock, whisking to combine. Return to medium heat. Bring to a simmer. Cook, stirring occasionally, for 15 mins or until the mixture reduces by half and thickens. Remove from heat. Strain the mixture into a jug and stir in the lemon juice. Cover to keep warm.
  • Step 2 Meanwhile, heat the oil in a large frying pan over medium heat. Add the salmon and cook for 2-3 mins each side for medium or until cooked to your liking. Transfer to a plate. Cook the lemon slices in the pan for 1-2 mins each side or until caramelised.
  • Step 3 Divide the salmon among serving plates. Drizzle salmon with the lemon butter sauce and serve with lemon slices, baby broccoli and beans.
