Ingredients

  • 800g chat (small coliban) potatoes, halved
  • 2 (about 180g each) baby fennel, trimmed, halved lengthways
  • 1 tablespoon coarsely chopped fresh rosemary
  • 60ml (1/4 cup) fresh lemon juice
  • 1 tablespoon olive oil
  • 8 (about 375g) lean Italian sausages
  • 2 sprigs fresh rosemary

Method

  • Step 1 Preheat oven to 220°C. Place the potato, fennel and chopped rosemary in a baking dish. Drizzle over the lemon juice and oil. Season with salt and pepper. Toss until well combined.
  • Step 2 Add the sausages and rosemary sprigs to the dish. Roast in oven, turning sausages once, for 25 minutes or until brown.
