Ingredients

  • 3 thick sausages
  • 1 tablespoon olive oil
  • 2 potatoes, peeled and thinly sliced
  • 1 tomato, chopped
  • 1/4 cup frozen peas, thawed
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 8 eggs
  • 1/2 cup cream or milk
  • 1/4 cup parsley, chopped
  • 1/2 cup tasty cheese, grated
  • Salad or vegetables, to serve

Method

  • Step 1 Heat a 25cm frying pan on high. Cook 3 thick sausages of choice for 5-10 mins, turning until golden and cooked through. Slice thinly.
  • Step 2 Heat 1 tablespoon olive oil in same pan on high. Cook 2 peeled and thinly sliced potatoes for 4-5 mins until golden. Add 1 chopped tomato and 1/4 cup thawed frozen peas and cook for 1 min. Transfer to a plate.
  • Step 3 Heat 1 tablespoon olive oil in same pan. Sauté 1 thinly sliced onion on high for 2-3 mins then stir 1 tablespoon each balsamic vinegar and brown sugar. Cook, stirring, for 1 minute. Return sausage mixture along with potato, tomato and pea mix to pan.
  • Step 4 In a jug, whisk together 8 eggs, 1/2 cup cream or milk and 1/4 cup chopped parsley. Season to taste. Pour over sausage mixture. Cook on low for 4-5 mins until beginning to set.
  • Step 5 Sprinkle with 1/2 cup grated tasty cheese and place under a preheated grill for 3-4 mins, until the top is browned and the frittata is firm. Serve with salad or vegetables.
