Ingredients

  • 2 tablespoons olive oil
  • 30g butter
  • 800g (about 4) green zucchini, washed, coarsely grated
  • 2 300g cans chickpeas (Edgell brand), drained, rinsed
  • Salt & freshly ground black pepper

Method

  • Step 1 Heat oil and butter in a deep frying pan over medium-high heat until foaming.
  • Step 2 Add zucchini and cook, stirring occasionally, for 5 minutes or until slightly browned. Add the chickpeas.
  • Step 3 Place a circle of non-stick baking paper directly on the surface of the zucchini and chickpeas.
  • Step 4 Reduce heat to medium-low and cook for 8 minutes or until zucchini is soft. Taste and season with salt and pepper.
