Ingredients

  • 300g piece sashimi-grade tuna fillet, halved lengthways into 2 logs
  • Sunflower oil, to brush and shallow-fry
  • 3 tablespoons black sesame seeds (see note) or white sesame seeds
  • 5cm piece ginger, thinly shredded
  • 1 long red chilli, seeds removed, cut into matchsticks
  • 2 teaspoons brown sugar
  • 2 teaspoons fish sauce
  • 2 tablespoons lime juice
  • 1 long green chilli, thinly sliced on an angle
  • 1/4 cup fresh coriander
  • 1/4 cup fresh mint leaves

Method

  • Step 1 Heat a frypan over high heat. Brush tuna lightly with oil and sear for 20 seconds on all 4 sides until light golden but raw in centre. Coat logs in sesame, then enclose in plastic wrap. Freeze for 30 minutes.
  • Step 2 Clean pan and return to medium heat with 2-3cm oil. Fry three-quarters each of the ginger and red chilli for 30 seconds until crisp. Drain on paper towel.
  • Step 3 Whisk sugar, fish sauce and lime juice in a bowl. Add green chilli, herbs and raw ginger and red chilli. Toss to combine. Slice tuna, then arrange on plates with salad. Top with crisp ginger and chilli.
