Ingredients

  • 200g butter, softened
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 2 garlic cloves, crushed
  • 8 corn cobs, husks on
  • 1 tablespoon lemon rind, finely grated
  • 1/3 cup flat-leaf parsley, chopped

Method

  • Step 1 Preheat a barbecue on high heat. Combine the butter, paprika, cayenne pepper and garlic in a small bowl. Season to taste.
  • Step 2 Use a thin length of husk to tie the husks back, if desired. Spread the corn with half the butter mixture. Cook, turning, for 12-14 mins or until corn is charred in spots and cooked through. Brush the corn with the remaining butter mixture. Transfer to a serving platter.
  • Step 3 Combine the lemon rind and parsley in a small bowl. Sprinkle over the corn to serve.
