Ingredients

  • 2 eggs
  • 1 1/2 tablespoons olive oil
  • 1/2 cup milk
  • 1 1/2 cups self raising flour
  • 100g smoked salmon, thinly sliced
  • 2 large zucchini, roughly grated
  • 1 tablespoon chopped dill

Method

  • Step 1 Combine eggs, olive oil and milk in a large bowl. Add flour and whisk until smooth. Stir through smoked salmon, zucchini, dill, salt and pepper.
  • Step 2 Spray a large non-stick frying pan liberally with oil spray and heat over medium heat. Spoon 1 tablespoonful quantities of the smoked salmon mixture into the pan, allowing room for spreading. Cook for 2-3 minutes each side or until golden underneath and cooked through. Remove and keep warm. Repeat with remaining smoked salmon mixture, regreasing the pan with oil spray between each batch.
  • Step 3 Serve with a simple green salad and sweet chilli sauce on the side.
