Ingredients

  • 1 tablespoon caster sugar
  • 1 tablespoon soy sauce
  • 2 star anise
  • 1 cinnamon quill
  • 1 teaspoon Szechuan peppercorns (see note), crushed
  • 4 cups (about 600g) mixed raw nuts
  • 2 tablespoons peanut oil
  • 1/4 teaspoon sesame oil

Method

  • Step 1 Place sugar, soy, star anise, cinnamon, pepper and 1 teaspoon salt in a pan with 2 cups (500ml) water. Bring to the boil, add nuts and simmer over low heat for 5 minutes. Drain, then pat dry well on paper towel. Heat oils in a large pan over mediumhigh heat. When hot, add nuts and fry for 2-3 minutes until crisp. Sprinkle with sea salt and serve the nuts with beer.
