Ingredients

  • 350g spaghetti
  • 2 slices Molenberg Swiss Bake Soy & Linseed bread
  • 1 tablespoon olive oil
  • 3 middle bacon rashers, trimmed, finely chopped
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 2 shallots, trimmed, finely chopped
  • 1/2 cup chopped fresh parsley
  • Sea salt & freshly ground pepper
  • 30g butter
  • 1/2 cup (40g) finely grated parmesan

Method

  • Step 1 Cook pasta in salted boiling water until just tender. Drain, reserving 1/3 cup of cooking liquid.
  • Step 2 Process bread until finely chopped. Heat oil in a large, non-stick pan over medium heat. Cook bacon until golden. Add breadcrumbs and cook until crisp (be careful as the grain can pop). Stir through garlic, chilli, shallots, and parsely, and season to taste.
  • Step 3 Toss pasta with butter, parmesan, half of the crumb mixture and enough cooking liquid to moisten. Divide between plates and top with remaining crumbs. Serve immediately.
