Ingredients

  • 1 1/3 cups (210g) wholemeal self-raising flour
  • 3/4 cup (105g) plain flour
  • 1 cup (220g) firmly-packed brown sugar
  • 2 teaspoons mixed spice
  • 3/4 cup (180ml) rice bran oil
  • 3 Coles Australian Free Range Eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup (80ml) milk
  • 1 large carrot, grated
  • 1 Fuji apple, cored, grated
  • 1 large Fuji apple, extra, cut into thin wedges
  • 1 teaspoon cinnamon sugar

Method

  • Step 1 Preheat oven to 180C. Grease an 8-hole, 3/4cup (180ml) capacity mini loaf pan.
  • Step 2 Place the combined flours, brown sugar and mixed spice in a bowl. Stir to combine. Whisk the oil, eggs, vanilla and milk in a separate bowl. Stir in the carrot and grated apple. Pour the apple mixture into flour mixture and stir until just combined.
  • Step 3 Divide the cake batter among the prepared holes. Top with the apple wedges and sprinkle with cinnamon sugar. Bake for 30 mins or until a skewer inserted into the centre comes out clean. Stand in the pan for 5 mins before turning onto a wire rack to cool. Serve warm or at room temperature.
