Ingredients

  • 2 cups cloudy pear juice
  • 1/2 cup honey
  • 4 whole star anise
  • 8 cardamom pods, bruised
  • 1 vanilla bean, split
  • 5cm piece fresh ginger, thinly sliced
  • 2 x 750ml bottles dry white wine
  • 1 beurre bosc pear, halved, cored, thinly sliced
  • 1/2 cup vanilla vodka (see notes)
  • 1 small lemon, thinly sliced

Method

  • Step 1 Place pear juice, honey, star anise, cardamom, vanilla bean, ginger and wine in a large saucepan over medium heat. Bring to a simmer. Remove from heat. Add pear slices. Stand for 20 minutes.
  • Step 2 Strain wine mixture into a large jug, reserving some pear slices. Stir in vodka. Serve in warmed glasses with lemon slices and reserved pear slices.
