Ingredients

  • 6 ripe plums, cut in half, stone removed
  • 4 frozen original waffles (Nanna's brand), thawed
  • 70g (1/3 cup, firmly packed) brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 100ml thin cream
  • 2 teaspoons caster sugar

Method

  • Step 1 Preheat oven to 220°C. Arrange the plums, cut-side up, in a shallow ovenproof baking dish. Place the waffles on a baking tray.
  • Step 2 Combine the brown sugar, 1/2 teaspoon of the cinnamon and 1/4 teaspoon of the nutmeg in a small bowl. Sprinkle evenly over the plums. Bake in preheated oven for 15-18 minutes, adding the waffles for the last 2 minutes, or until the plums are soft, juicy and brown, and waffles are heated through.
  • Step 3 Meanwhile, use an electric beater to beat the cream, caster sugar, remaining cinnamon and nutmeg in a small bowl until soft peaks form.
  • Step 4 To serve, place a waffle on each serving plate. Top with three plum halves and a dollop of nutmeg cream. Drizzle with any plum juices.
