Ingredients

  • 1.6kg whole chicken
  • 2 lemons
  • 3 teaspoons dried chilli flakes
  • 2 teaspoons coriander seeds
  • 2 garlic cloves, crushed
  • 2 teaspoons dried oregano
  • 2 teaspoons dried mint
  • 2 tablespoons olive oil
  • Coleslaw, to serve

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Finely grate rind of 1 lemon. Cut into quarters. Cut remaining lemon into 8 wedges. Lightly grease a roasting pan. Rinse chicken (including cavity) under cold running water. Pat dry with paper towel. Trim excess fat. Place lemon quarters into chicken cavity. Tie legs together with string. Place chicken, breast-side up, in pan. Place lemon wedges around chicken.
  • Step 2 Combine lemon rind, chilli, coriander, garlic, oregano, mint and oil in a bowl. Season with salt. Rub chicken with rind mixture. Roast for 1 hour or until juices run clear when chicken thigh is pierced with a skewer. Stand, covered, for 10 minutes. Serve with coleslaw and roasted lemon wedges.
