Ingredients

  • 2 tablespoons olive oil
  • 800g beef chipolata sausages or pork chipolata sausages
  • 4 onions, thinly sliced
  • 1 cup (250ml) Massel beef stock
  • 2 cups (520g) arrabbiata (or other spicy) tomato pasta sauce
  • 440ml can Guinness or other stout beer
  • 4 tablespoons (1/3 cup) brown sugar
  • 2 bay leaves
  • 800g canned borlotti beans, rinsed, drained
  • Chopped parsley, to serve
  • Potatoes, to serve

Method

  • Step 1 Preheat the oven to 180°C.
  • Step 2 Heat the oil in a large flameproof casserole over medium-high heat. Cook sausages for 5-6 minutes until browned all over. Set aside. Drain some of the oil from the pan if necessary, then add onion and cook over medium-low heat for 5-6 minutes until soft. Add stock, sauce, beer, sugar and bay leaves, then bring to the boil. Reduce heat to medium-low and return sausages to pan with beans. Transfer to the oven for 40 minutes until thick. Stir in chopped parsley and serve with baked potatoes if desired.
