Ingredients

  • 250g butter, softened
  • 3/4 cup caster sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 3 cups plain flour
  • 2 x 200g packets fruit drop boiled lollies (see note)

Method

  • Step 1 Preheat oven to 170C/150C fan-forced. Line 4 baking trays with baking paper.
  • Step 2 Using an electric mixer, beat butter, sugar, vanilla, egg and 1 tablespoon cold water until light and fluffy. Transfer to a large bowl. Stir in flour. Turn onto a lightly floured surface. Gently knead until dough comes together. Divide in half. Shape halves into discs. Wrap in plastic wrap. Refrigerate for 45 minutes.
  • Step 3 Roll 1 dough disc between 2 sheets of baking paper until 5 mm thick. Using an 8cm Christmas tree-shaped cutter, cut 1 tree shape from dough. Place on prepared tray. Using a 4.25cm Christmas tree-shaped cutter, cut 1 small tree from the centre of a larger tree. Re-roll and cut dough scraps. Place 1 lolly in the centre of each tree. Bake, 1 tray at a time, for 7 to 8 minutes or until lollies are melted and biscuits are firm. Stand on trays for 10 minutes (see note). Cool on a wire rack.
  • Step 4 Repeat process with remaining dough disc and lollies. Serve.
