Ingredients

  • 125g unsalted butter, softened
  • 1/4 cup finely chopped semi-dried tomatoes
  • 1 1/2 tablespoons baby capers, rinsed and drained
  • 2 tablespoons chopped flat-leaf parsley
  • 1 teaspoon tomato paste
  • 4 beef t-bone steaks, trimmed
  • Salt and cracked black pepper
  • Flavoured butter, to serve
  • Steamed vegetables or salad, to serve

Method

  • Step 1 Place the softened butter in a bowl and add the tomato, capers, parsley and tomato paste. Mix until well combined.
  • Step 2 Place a large piece of plastic wrap on a flat clean work surface. Form the butter mixture into a log shape and place on the plastic sheet. Roll up in the plastic wrap, twisting the ends to enclose. Refrigerate until firm.
  • Step 3 Heat a barbecue grill plate to high. Season the steak with salt and pepper and place on the grill. Cook for 3 minutes either side for medium, or until cooked to your liking. Remove, cover and set aside for a few minutes to rest.
  • Step 4 Divide steak among serving plates and top with a couple of slices of flavoured butter and some steamed vegetables or salad.
