Ingredients

  • 60g unsalted butter, at room temperature
  • 1 French shallot, finely chopped
  • 1 tablespoon chopped fresh continental parsley
  • 2 teaspoons chopped fresh tarragon
  • 2 teaspoons chopped fresh chives
  • 2 bunches (about 350g) broccolini, trimmed, cut into long florets

Method

  • Step 1 Place the butter, shallot, parsley, tarragon and chives in a medium bowl. Stir until smooth and well combined.
  • Step 2 Cook the broccolini in a saucepan of salted boiling water for 5 minutes or until bright green and tender crisp. Drain.Transfer to a serving dish. Top with the butter mixture and set aside until the butter melts. Serve.
