Ingredients

  • 2 tablespoons olive oil
  • 2.25kg red onions, halved, thinly sliced
  • 4 garlic cloves, crushed
  • 2 teaspoons fresh thyme leaves
  • 1/3 cup firmly packed brown sugar
  • 1/3 cup balsamic vinegar

Method

  • Step 1 Heat oil in a large saucepan over medium-low heat. Add onion. Cook, stirring occasionally, for 30 minutes or until onion has softened.
  • Step 2 Add garlic and thyme. Cook, stirring, for 3 minutes. Add sugar and vinegar. Cook, stirring, for 20 minutes or until mixture thickens and caramelises. Season with salt and pepper. Set aside to cool for 10 minutes. Serve.
