Ingredients

  • 12 small just-ripe plums, halved, stoned
  • 1/4 cup (55g) caster sugar
  • 1 tablespoon orange juice
  • 8 thyme sprigs
  • 200g crème fraîche (see notes)
  • 1 tablespoon icing sugar mixture
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 8 Coles Crumpet Rounds, toasted

Method

  • Step 1 Preheat oven to 180C. Line a baking tray with baking paper. Arrange plums, cut-side up, on tray. Sprinkle with sugar and drizzle with orange juice. Sprinkle with thyme. Bake, turning occasionally, for 10-15 mins or until plums are tender and release their juices. Set aside to cool slightly.
  • Step 2 Combine the crème fraîche or sour cream, icing sugar, cinnamon and cardamom in a small bowl.
  • Step 3 Arrange crumpets on serving plates. Spoon over crème fraîche mixture and top with plums. Drizzle with any pan juices.
