Ingredients

  • 1 sheet (25 x 25cm) reduced-fat puff pastry, just thawed
  • 250g strawberries, hulled, washed, halved lengthways
  • 5g butter, melted
  • 1 tablespoon brown sugar
  • 4 scoops light vanilla ice-cream

Method

  • Step 1 Preheat oven to 210C. Cut the pastry sheet into quarters and place on a baking tray.
  • Step 2 Arrange strawberries evenly over pastry squares, leaving a 2cm border around the edges. Fold in pastry corners to meet in the centre. Brush lightly with melted butter and sprinkle with sugar.
  • Step 3 Bake in preheated oven for 10-12 minutes or until pastry is golden around the edges and strawberries soften slightly. Remove from oven.
  • Step 4 Place tarts on serving plates. Serve with ice-cream.
