Ingredients

  • 10g butter, softened
  • 1/4 cup pecans, finely chopped
  • 1/4 cup sultanas
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 4 medium packham pears, peeled (see note)
  • Pure cream, to serve

Butterscotch sauce

  • 100g butter, chopped
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup thickened cream

Method

  • Step 1 Using fingers, rub butter, pecans, sultanas, cinnamon and sugar together until well combined.
  • Step 2 Cut tops off pears, about one-third from the top of each pear. Leaving a 1cm border around edge, use a teaspoon to scoop out a 3cm-deep hole from cut side of each pear base. Discard flesh. Divide pecan mixture between holes.
  • Step 3 Make Butterscotch sauce: Place butter into a deep, 3 litre-capacity heatproof, microwave-safe dish. Cover. Microwave on HIGH (100%) for 1 minute or until butter has melted. Add brown sugar and cream. Whisk to combine.
  • Step 4 Place pears and pear tops into the sauce. Cover loosely with plastic wrap. Microwave on HIGH (100%) for 7 minutes or until pears are soft but still holding their shape.
  • Step 5 Carefully remove pear bases from sauce and place in serving bowls. Top with pear tops. Microwave sauce, uncovered, on HIGH (100%) for 5 minutes or until slightly thickened. Stand sauce for 2 minutes. Spoon sauce over pears. Serve with cream.
