Ingredients

  • 300g sugar snap peas, topped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh orange juice
  • 1 teaspoon finely grated orange rind
  • 35g (1/3 cup) flaked almonds, toasted
  • 1 tablespoon chopped fresh dill

Method

  • Step 1 Cook the sugar snap peas in a saucepan of salted boiling water for 2-3 minutes or until bright green and tender crisp. Drain and return to the saucepan.
  • Step 2 Whisk the oil, orange juice and orange rind in a small bowl until combined.
  • Step 3 Add the dressing, almonds and dill to the sugar snap peas. Season with salt and pepper. Toss until well combined. Transfer to a serving dish.
