Ingredients

  • 1 1/2 cups brown rice
  • 100g snow peas, trimmed, sliced lengthways
  • 520g packet crunchy noodle coleslaw kit
  • 2 long red chillies
  • 2 tablespoons sesame seeds, toasted
  • 425g can tuna in springwater, drained, flaked
  • 1 avocado, thinly sliced
  • 1/4 cup drained pickled ginger
  • 1/3 cup fresh coriander leaves
  • 2 teaspoons sesame oil
  • 2 tablespoons salt-reduced soy sauce

Method

  • Step 1 Cook rice following packet directions. Transfer to a large bowl.
  • Step 2 Place snow peas and coleslaw kit (including dressing) in a large bowl. Toss to combine.
  • Step 3 Remove and discard seeds from 1 chilli and finely chop. Add to rice with sesame seeds. Stir to combine. Divide rice mixture and coleslaw mixture among serving bowls.
  • Step 4 Thinly slice remaining chilli. Arrange tuna, avocado, ginger, coriander and chilli in bowls. Season with salt and pepper. Whisk sesame oil and soy sauce together. Drizzle over bowls. Serve.
