Ingredients

  • 4 bacon rashers, coarsely chopped
  • 1 large swede, peeled, thinly sliced
  • 4 large potatoes, thinly sliced
  • 1 brown onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • 6 thyme sprigs
  • 2 teaspoons coarsely chopped rosemary
  • 300ml thickened cream
  • 1/2 cup (125ml) chicken stock
  • 1/2 cup (60g) coarsely grated tasty cheddar
  • Thyme sprigs, extra, to serve

Method

  • Step 1 Preheat oven to 180C. Grease a 6-cup (1.5L) ovenproof dish.
  • Step 2 Cook the bacon in a medium frying pan over medium heat, stirring occasionally, for 5 mins or until golden brown.
  • Step 3 Layer the swede, potato, onion, garlic, thyme, rosemary and bacon in the prepared dish. Combine cream and stock in a small bowl. Season. Pour evenly over the potato mixture.
  • Step 4 Bake for 50 mins-1 hour or until potato and swede are tender and gratin is golden brown. Sprinkle with cheddar. Bake for 15 mins or until golden brown. Set aside for 5 mins to cool slightly.
