Ingredients

  • 1 x 300g focaccia bread, halved, split
  • 1/4 cup cranberry and caramelised red onion chutney (Baxters brand)
  • 6 slices (150g) chargrilled sweet potato
  • 60g goat's cheese, thinly sliced
  • 1/4 cup macadamias, chopped
  • 1/3 cup basil leaves

Method

  • Step 1 Preheat sandwich press. Spread focaccia bases with chutney. Top with sweet potato, cheese, macadamias and basil. Season with salt and pepper.
  • Step 2 Sandwich with focaccia tops and place in sandwich press. Cook for 4 to 5 minutes or until toasted and heated through. Serve.
