Ingredients

  • 300g (2 cups) frozen peas
  • 2 garlic cloves, chopped
  • 1 lemon, rind finely grated
  • 2 tablespoons fresh mint leaves, plus extra, to serve
  • 125ml (1/2 cup) crème fraîche
  • 40g (1/2 cup) shredded parmesan, plus extra, to serve
  • 350g dried tagliatelle

Method

  • Step 1 Bring a large saucepan of salted water to the boil over high heat. Cook peas for 2 minutes or until tender. Use a slotted spoon to transfer to a bowl. Place 13⁄4 cups of the peas in a food processor. Add garlic, rind and mint. Process to a coarse paste. Add crème fraîche and parmesan. Season with pepper and process until smooth.
  • Step 2 Meanwhile, add pasta to pan of boiling water. Cook, following packet directions, until al dente. Drain and return to the pan.
  • Step 3 Add pea mixture to pasta and toss to combine. Season. Stir in remaining peas. Serve sprinkled with the extra parmesan and mint.
