Ingredients

  • 3 eggs
  • 2 green shallots
  • 100g snow peas
  • 1 small fresh red chilli (optional)
  • 1 tablespoon peanut oil
  • 2 x 250g packet microwave Uncle Ben’s Rice Medley
  • 1 bunch broccolini
  • 150g (1 cup) frozen baby peas
  • 145g (1 cup) roasted cashews
  • 2 tablespoons bought teriyaki marinade
  • 2 tablespoons Capilano Dark & Bold Honey
  • Black sesame seeds, to sprinkle

Method

  • Step 1 Heat a wok or large frying pan over high heat.
  • Step 2 While the pan heats up, whisk the eggs in a jug. Season well. Thinly slice the shallots. Thinly slice the snow peas lengthways. Finely chop the chilli, if using.
  • Step 3 Heat the oil in the pan. Pour in the egg and swirl to coat pan in a thin layer. Cook for 2 minutes or until set and golden underneath.
  • Step 4 While the omelette cooks, place 1 packet of rice in the microwave and warm following packet directions. Repeat with the remaining packet.
  • Step 5 Remove the omelette from the pan and shred.
  • Step 6 Add the broccolini and snow peas to the pan. Stir-fry for 2 minutes or until bright green and tender crisp. Transfer to a plate. Add the shallot, peas, cashews and rice to the pan. Stir-fry for 1 minute or until combined. Add the teriyaki marinade and honey. Toss until the rice mixture is well coated. Top with the broccolini, snow peas and omelette. Sprinkle with sesame seeds and chilli, if using, to serve.
