Ingredients

  • 150g diced bacon
  • 2 spring onions, chopped
  • 1 clove garlic, crushed
  • 3 cups cooked brown rice
  • 1/2 pineapple, peeled, cut into 5mm pieces
  • 1/2 cup blanched almonds, roasted
  • 1 red chilli, chopped
  • 1/4 cup coriander leaves, to serve
  • 2 tablespoons Coles brand blended vegetable oil
  • 2 teaspoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon Coles brand caster sugar
  • 1 teaspoon fresh ginger, grated

Method

  • Step 1 To make the dressing, whisk the combined oil, soy sauce, sugar and ginger in a small jug until the sugar dissolves.
  • Step 2 Heat a frying pan over medium-high heat. Cook the bacon for 2-3 mins or until crispy. Add spring onion and cook for 1 min, then add the garlic and cook for 30 secs. Toss in rice, pineapple, almonds and chilli. Cook for 5 mins or until heated through. Drizzle over the dressing and toss through. Top with coriander to serve.
