Ingredients

  • 1 tablespoon peanut oil
  • 500g Coles Brand pork mince
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed ginger
  • 1 long red chilli, sliced
  • 1 lime, zested and juiced (plus extra lime cheeks, to serve)
  • 1/4 cup fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon white sugar
  • 250g Coles Brand microwave rice
  • 1 bunch fresh coriander, leaves picked
  • 1 bunch fresh mint, leaves picked
  • 2 tablespoon peanuts
  • 2 baby cos lettuce, cut into wedges

Method

  • Step 1 Heat oil in a large frying pan or wok. Cook mince, stirring to break up any lumps, for 5 mins, until brown. Add garlic, ginger, chilli, lime zest, juice, fish sauce, soy sauce and sugar to pork. Cook for 1-2 mins, until fragrant. Add rice and stir to combine. Cook for 1-2 mins, until heated through.
  • Step 2 Remove from heat. Stir through most of the coriander and mint. Spoon pork mixture into serving bowls. Top with peanuts and remaining coriander and mint. Serve with cos lettuce and lime cheeks.
