Ingredients

  • 250g mascarpone
  • 1 tablespoon marsala
  • 1/4 cup (45g) icing sugar mixture
  • 6 sheets filo pastry
  • 50g butter, melted
  • 1/2 cup green grapes, halved
  • 1/2 cup black grapes, halved
  • 2 figs, thinly sliced
  • 1/2 cup (100g) caster sugar

Method

  • Step 1 Preheat oven to 180°C. Combine the mascarpone, marsala and 2 tablespoons of the icing sugar in a small bowl. Cover with plastic wrap and place in the fridge.
  • Step 2 Line an oven tray with baking paper. Lay a sheet of filo on a clean work surface. Brush lightly with melted butter and sprinkle with a little of the icing sugar. Continue layering with remaining filo, butter and icing sugar. Use a small, sharp knife to cut the filo crossways in half. Cut each half in half again to form 4 strips. Cut each strip crossways into thirds to make 12 rectangles. Place on the lined tray.
  • Step 3 Bake in preheated oven for 5 minutes or until golden. Remove from oven and set aside to cool on the tray.
  • Step 4 Place a filo sheet on each serving plate. Spoon half the mascarpone over the filo. Arrange half the grapes and figs over the mascarpone. Continue layering remaining filo, mascarpone, figs and grapes.
  • Step 5 Place the sugar in a medium frying pan over medium heat. Cook, stirring occasionally, for 5 minutes or until sugar dissolves and caramelises. Remove from heat. Gently drizzle over each mille-feuille. Serve immediately.
