Ingredients

  • 2 ripe tomatoes
  • 1/4 cup fresh basil leaves, torn
  • 4 thick slices day-old crusty Italian bread
  • 1 garlic clove, peeled
  • 1 tablespoon extra virgin olive oil

Method

  • Step 1 Cut the tomatoes into 1cm pieces and place in a bowl. Stir in the basil.
  • Step 2 Toast the bread until golden.
  • Step 3 Cut the garlic clove in half and gently rub the cut side over the toast.
  • Step 4 Divide the tomato mixture evenly among the toast and drizzle over the oil. Season with salt and pepper. Serve immediately.
