Ingredients

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 4 cups (1 litre) Massel vegetable liquid stock
  • 800g can chopped tomatoes
  • 2 medium carrots, peeled and chopped
  • 2 medium zucchini, chopped
  • 2 potatoes, peeled and chopped
  • 1/2 cup (50g) dried pasta spirals
  • 1/4 cup fresh parsley, chopped

Method

  • Step 1 In a large saucepan heat oil over a medium heat. Add onion to pan and cook for 2-3 minutes until softened.
  • Step 2 Pour stock and tomatoes into pan, bring to a simmer, add carrots, zucchini and potatoes. Cover, cook for 20 minutes, stirring occasionally.
  • Step 3 Remove lid, stir pasta into soup and cook for a further 15 minutes, until pasta is cooked.
  • Step 4 Sprinkle soup with fresh parsley to serve. Serve with crusty bread or toast.
