Ingredients

  • 2 sheets Coles Brand shortcrust pastry, thawed
  • 1 1/2 cups golden syrup
  • 2 1/2 cups fresh wholemeal breadcrumbs
  • 2 eggs, lightly beaten
  • Finely grated zest & juice of 1 lemon
  • Coles Brand icing sugar mixture, to dust
  • 200ml Coles Brand double cream, to serve (optional)

Method

  • Step 1 Preheat oven to 180C or 160C fan-forced. Grease a 19cm x 29cm slice pan. Join pastry sheets together. Cut a 19cm x 29cm rectangle from pastry and lay over the base of prepared pan. Prick base with a fork. Chill for 10 mins.
  • Step 2 Line the pastry with baking paper and fill with pastry weights or rice. Bake for 15 mins. Remove the paper and weights and bake for another 5 mins.
  • Step 3 Meanwhile, heat golden syrup in a pan over low heat. Stir in breadcrumbs, egg and lemon zest and juice.
  • Step 4 Pour the filling into pastry shell. Bake for 20-25 mins until just set. Cool completely in pan. Cut into pieces, dust with icing sugar and serve with cream.
