Ingredients

  • 6 eggwhites
  • 1 1/2 cups caster sugar
  • 250g Dairy Whip Lite Cream
  • 1 mango, thinly sliced
  • 1 banana, thinly sliced
  • 2 passionfruit, pulp removed

Method

  • Step 1 Preheat oven to 120°C. Draw a 24cm circle on a sheet of baking paper. Place onto a baking tray, pencil-side down.
  • Step 2 Using an electric mixer, beat eggwhites in a large bowl until soft peaks form.
  • Step 3 Add sugar, 1 tablespoonful at a time, beating well after each addition. Beat for 10 minutes, or until sugar has dissolved.
  • Step 4 Spoon meringue onto baking paper in the shape of a circle. Bake for 1 to 1 1/2 hours, or until dry and crisp. Cool in oven.
  • Step 5 Top pavlova with Dairy Whip Lite Cream and fruit. Serve.
