Ingredients

  • 375g tagliatelle pasta (see note)
  • 1 tablespoon olive oil
  • 1 red onion, sliced into thin wedges
  • 2 garlic cloves, crushed
  • 4 Roma tomatoes, roughly chopped
  • 1 red capsicum, diced
  • 2 tablespoons capers, drained, rinsed
  • 70g baby rocket
  • 185g can tuna in springwater, drained, flaked
  • 30g parmesan, grated

Method

  • Step 1 Cook pasta in a large saucepan of boiling water, following packet directions, until tender.
  • Step 2 Meanwhile, heat oil in a large, non-stick frying pan over medium heat. Add onion and garlic. Cook, stirring often, for 2 to 3 minutes or until onion is soft. Increase heat to high. Add tomato, capsicum and capers. Cook, stirring occasionally, for 4 to 5 minutes or until vegetables are soft.
  • Step 3 Drain pasta, reserving 1/4 cup cooking water. Return pasta and cooking water to saucepan. Add tomato mixture, rocket, tuna and parmesan. Season with salt and pepper. Toss over low heat until well combined and heated through. Serve.
